Siberian Federal University: Krasnoyarsk Hosts Gastro Forum 2022

On 11–12 October 2022, Krasnoyarsk hosts the first Russian Gastro Forum 2022, where 30 experts, including restaurateurs, chefs, producers, scientists and more than 400 guests take part.

The School of Gastronomy has become the main venue for the event. The program includes a business part, educational and original set menus by chefs of Krasnoyarsk restaurants. Rector of SibFU Maksim Rumiantsev greeted the guests of the forum. He emphasized that this event is part of the Gastronomic R&D Park strategic project of the Priority 2030 Academic Excellence Program.

“The project provides for systematic work not only in the field of gastronomic education, but also in the field of gastronomic science. It is a way to connect education, science and business. At first, we considered Gastropark as a staff project, then as a technological one. Today it is expanding and designed to change the culture and environment, create new markets, respond to economic challenges,” said Maksim Rumiantsev.

On the first day of the Gastro Forum 2022, the participants discussed the prospects for transforming the hospitality industry at a plenary session, titled Gastronomy: Driver of Regional Leadership. Aleksey Gorensky, director of the School of Gastronomy, presented the tasks of the hospitality industry. He formulated the concept of gastro industry development in five fields: education, science, culture, tourism and entrepreneurship.

Yulia Verkhushina, deputy head of Administration of the Governor of Krasnoyarsk Territory, emphasized the importance of having a specialized school in Krasnoyarsk for the development of gastronomic culture.

“In a few years, Krasnoyarsk may indeed become the center of Russian competence in the field of gastronomy. However, this is a very ambitious task which requires not only a higher educational institution, but also the participation of schools and vocational educational institutions. I am sure that we are moving in this direction. By bringing together such communities, bringing interesting speakers, we also increase our visibility. We have a lot to learn, but the crucial thing is to create here a professional community,” noted Yulia Verkhushina.

Ivan and Sergey Berezutskies, restaurateurs, chefs at Twins Garden, told how to build a successful local business with the focus on a local product.

“Krasnoyarsk has everything to become a gastronomic capital — local products, infrastructure, personnel. We were struck by the scale and passion of the students who study here, they are amazing young people who are passionate about their work. The lecturers of the School of Gastronomy make students’ eyes shine with delight. Their positivity and charge are the engine of the future. We have been to many gastronomy schools in the world. Of course, as restaurateurs, we will definitely hire SibFU’s graduates. Some students of the School of Gastronomy have already done an internship with us. These are very professional guys, we don’t know of another similar institution that trains such professionals in our country,” said Ivan Berezutsky.

In addition, the first day of the Gastronomic Forum brought SibFU five strategic partnerships at once. Agreements were signed with the International University of Tourism and Hospitality, Moscow State University of Food Production, Siberian Institute for the Development of Creative Industries, Krasnoyarsk Regional Business Development Center and Bellini gastronomic ecosystem. The agreements are aimed at developing educational, scientific, cultural and other types of relationships, launching joint educational programs, as well as conducting joint research.
