Siberian Federal University: SibFU students will study the traditional Ket diet during their gastronomic expedition

Gastro-archeologist and researcher of Siberian cuisine Igor Shein and concept-chef of the Kitchen and Fartuk (lit.: apron) restaurants, one of the ideologists of the AUC (Authentic Ural cuisine) project Sergey Miroshnikov will go on the expedition together with the students.

During interviews and surveys with the local population, the expedition will learn recipes and traditional cooking techniques. As part of the fieldwork, the team will collect a herbarium to determine the food plant base of the northern people. In addition, the students will learn what products and technologies of the Kets are suitable for use in public catering.

The expedition will result in a gastronomic theatre in Istorii (lit.: Stories) restaurant. The students will have to reenact the traditional dinner of the northern people under the mentorship of Igor Shein, who will be the project’s screenwriter.

The gastronomic expedition is funded by a grant from Rosmolodezh — in 2021, Siberian Element # Arctic project won the All-Russian competition of youth projects among educational institutions of higher education.
