Scientists Develop Method In Fruits And Berries To Improve The Properties Of Baking
Scientists from the School of Trade and Services have developed a recipe for confectionery enriched with valuable dietary fibre, vitamins and minerals from secondary plant raw materials — pomace and skins of fruits and berries. Pastries contain fewer calories and can be used for baby and diet food.
The researchers noted that from the point of view of a healthy diet, it is recommended to limit the consumption of flour confectionery. However, if you replace part of the high-grade flour with powders obtained from pomace and skins of fruits after their processing, this will improve the nutritional value of pastries by an order of magnitude and make them healthier.
“Herbal supplements are a promising source of proteins, dietary fibre, vitamins and minerals. Secondary raw materials result from processing of fruit and berries by large enterprises of the food industry to make juice, fruit drinks, jam, jelly, marmalade, etc. Pomace from apples, pineapples, mangoes, bananas, plums, cranberries, lingonberries, raspberries and black currants are of particular value. We studied pomace of apples, mangoes and raspberries and used them to modify the common recipes for desserts loved by many,” explained Galina Gubanenko, head of the Department of Technology and Organization of Catering, SibFU.
It turned out that apple pomace contains only 4-5% sugar, while there are up to 3% useful pectins, about 5% fibre, and a significant amount of minerals and organic acids. Pomace from mango and raspberry are not too high in calories — only about 50-60 kcal.
“We have developed recipes for a Boucher cake with mango pomace powder and mango cream, a Swiss roll with apple powder and apple cream. We also tried to bake shortbread cookies with raspberry pomace. It was possible to replace up to 10% of refined flour with these useful additives. Thanks to raspberry raw materials added to shortbread cookies, the butter content has decreased by 10%. This is a low-calorie product. Our products contain more than 15 % daily nutrients, and the dietary fibre from pomace helps to remove toxic substances and improves digestion,” noted Galina Gubanenko.
